PULLMAN, Wash. — Washington State University researchers may have discovered a new hope for people who can’t eat gluten.

KING 5 reports WSU worked with scientists around the globe to create a new type of wheat that includes an enzyme meant to break down the gluten proteins.

People with celiac disease, which is an autoimmune disorder, can’t properly digest gluten and eating foods containing wheat can cause them pain and damage their small intestine.

Researchers say while the new wheat is still being tested, they hope it will be a simpler and lower-cost option for people with celiac disease or a gluten intolerance.
